Manhattan Steel Corp.

This is a cocktail that was inspired by a recent trip to New York and my reading of Dave Wondirichs great book on Prof Gerry Thomas "Imbibe". This is a Clear Manhattan with a Splash of marashino. Both the vermouth and the Bourbon have been put thorugh a Rotavapor vacuum still (will post photo in next posting!) with a few homemnade adjustments. This allows me to clarify the spirits whilst allowing me to keep alot more of the flavour than just re-distilling off. It gives the mahattan a nice steely quality with a clarity of flavour
